A salad doesn’t necessarily need to be on a bed of lettuce, not does it have to be boring and put together at the last-minute. Salads can be zesty, fruity, crunchy and even have a bit of carbohydrates for good measure! My newly discovered love for couscous, sees me pairing it up with greens, fruits and cheese often. While many people mistake couscous for a pasta, though its made of durum wheat the manufacturing process is very different, The wheat  is crushed rather than ground up to make the pasta. What i love about couscous in a salad is that it gives the salad a beautiful texture.  (more…)

This is one the simplest salads to put together, if you have good knife skills. The first time I ate a Cobb salad was at Hard Rock Cafe. When the plate came to our table it was the amazing array of colours that threw me off guard, each ingredient forming a perfect line as it lay against each other, beckoning me to throw in the dressings and mix it all up. Food can’t be linear, at least not for me!

I succumbed…succumbed to the need of making my food healthier. Boiled potatoes are fine, but those gorgeous soft on the inside and crispy on the outside, thrice-cooked-potato chips no way…So when I cooked up this delicious cheese stuffed chicken burger (made with chicken that has been steeped in hot water to knock of the fat, yeah yeah the things I do to keep the fat away) I just had to make homemade baked crisps to go with it.

Indian food is essentially all about combining a veggie dish, with a nutritious dal and a bread or rice. A yoghurt based raita is thrown in for good measure and some families even insist on a kachumber–if you look at it from a nutrition point of view, a good mix of carbs, proteins and fats!

For the last one month we’re thriving on a low-carb diet. It’s quite a task to think of innovative tasty dishes that can be mopped up without a bread or rice, but 20 days into the diet I’ve managed to add a delicious salad to every meal. 🙂  This is a super easy salad that can be tossed together in less than five minutes.

Sweet and Spicy Chicken Salad

Let’s not beat around the bush here, diet food is not always fun. And no matter how many recipe sites I go to or posts I surf through, I don’t usually find a recipe that brings a smile to my lips the way French Fries does! Why does diet food always need to be bland and uninspiring?

When I started off cooking for my diabetic husband knocking processed foods, carbs, fats and sugars was a priority. Salads became a must have. Then came the ordeal of making greens interesting and innovative. I mean how many kinds of salads can you make?
