I don’t know about you, but I am gearing up for a super lazy weekend, where the food cooked is simple, quick and lulls you back into lazydom 🙂 Potatoes thus are an important part of this meal. Throw in some eggs for the proteins and a quick salad for the fibre, a glass of wine stirred into some wholesome mushroom and sausages and I am set. Does that seem like too much work?
You will be surprised! This meal, and I mean all 3 dishes, will take you all of 45 minutes to put together from washing the veggies to finish. I told you it would be a lazy meal! 🙂
It’s been a crazy week.. came down with the flu and all my planned uploads went for a toss! Lesson to learn never plan 🙂 Just do it…So today was a marathon session in the kitchen. It is after all Christmas Eve and there’s so much to do…It started with baking these super delicious buttery cheese, rosemary and buttermilk scones. Would go perfect with the bacon and cranberry jam I planned to make later in the evening.
If you’re throwing a party and are stuck for ideas or not quite deft in the kitchen, make something quick and relatively easy that can charm your guests! This stuffed bread is often a charmer. I uses a hard bread, which is commonly known as Brun in India. And dipped into the various sauce bottles that are always lined up in my kitchen. All it needs us some cheeses, and fresh herbs and of course an oven.
Weekends call for some quick and colourful meal options. I mean even for breakfast I hate seeing a boring sunny side up or poached eggs with toast or even an egg sandwich. It does nothing for my desire for the day to start off on a different (read happy, lazy) note. Enter Internet and Google search engine. Words keyed in: Colourful, eggs, wholesome, diet, Images. And out pops this colourful picture of a baked egg or Shakshuka.
I’ve often been told that beans are fabulous for health and I must include it in my diet as often as I can. So my mornings start with sprouted green gram and in the evening’s I try to make myself a hummus, (have you heard of black bean hummus? It tastes quite yum when served with rye crackers) or at times even use it as a base for my meats and gravies or even just stir fried in a dollop of butter with garlic. But this is the first time I’ve used 7 different beans together in a salad and it is quite a treat.
How do you like your eggs done? For me it always depends on my mood. When I’m in a hurry it’s a quick sunny side up, if I’m bored out of my bones, it’s a savoury French Toast and when I want to make something exotic it’s either a Shakshuka or Eggs Benedict. But this Italian dish is quite a hit too. I load it up with so much cheese, that the end product is gooey and soft.
Some days you just want a quick nutritious meal, without spending too much time in the kitchen. This is the kind of recipe you need in your cookbook for those times. What’s more it works for breakfast, lunch, dinner and even in between meals!
My love for cheese and potatoes at times takes over my life. And this recipe is just the perfect amalgamation of that love. It renders the potatoes crispy on the outside yet moist on the inside and the cheesy cover on top is nothing but sin…
I succumbed…succumbed to the need of making my food healthier. Boiled potatoes are fine, but those gorgeous soft on the inside and crispy on the outside, thrice-cooked-potato chips no way…So whenI cooked up thisdelicious cheese stuffed chicken burger(made with chicken that has been steeped in hot water to knock of the fat, yeah yeah the things I do to keep the fat away) I just had to make homemade baked crisps to go with it.
