2016 has brought with it a whole lot of guests and entertainment. I’ve literally thrown a party every other day of the year so far! But it’s been a fun fortnight with my refrigerator always full of desserts and pastries and quick bites and materials to put together a quick snack.

Yes, it is a good idea to keep some pastry dough handy at all times. Now I come from a family that doesn’t use a microwave so yes it does get difficult to defrost the dough before it can be rolled into these french delicacies, but it’s all part of the game. But if you aren’t as crazy as I am, you can buy these and regular ready to use tart bases at any grocery store, In Mumbai ‘Camy’ or ‘Nature’s Basket’ is a good place to shop for them.

Nachos with 7 Toppings

Sour Cream adds to the pleasure of digging into this 7 layered nachos
Sour cream adds to the pleasure of digging into this 7 layered nachos

I’ve always loved the Nachos that are served at Hard Rock Cafe. It’s a meal in itself with close to 7 to 8 different toppings. This recipe comes very close to it and is perfect entree for a party of 10 to 12 hungry friends, where snacks and spirits take precedence over the main course.

I’ve experimented a whole lot with the textures of the corn chips and the cheese to be used. Nothing comes close to pepper jack cheese but when you can’t get your hand on it try Gruyère cheese or even cheddar and if even those are impossible then go with just mozzarella. Nothing better than the stringy texture.

I’ve added a cranberry cookie to provide with that buttery-biscuity texture

The New Year started with a bang! I’ve had 3 parties in as many days…the kitchen was in over drive and my fridge was bursting at the seams…it was time to innovate and turn things around to make new and innovative out of old and boring…that’s when the cake pops happened.

Chocolate Walnut Cake with Chocolate Mousse and Fresh Strawberries

I could have thought of a brilliant name but i didn’t want to lose out on any of the ingredients. I mean what’s the use of fancy names if you don’t know what’s in it. Right? Anyway so this dessert was born only because I messed up on what I was actually trying to make. :) The ingredients are all the same, it’s just the assembly that went for a toss. I tried to make chocolate bowls on balloons, not realising that the temperature in my kitchen was not conducive to that kind of assembly.

If you’re throwing a party and are stuck for ideas or not quite deft in the kitchen, make something quick and relatively easy that can charm your guests! This stuffed bread is often a charmer. I uses a hard bread, which is commonly known as Brun in India. And dipped into the various sauce bottles that are always lined up in my kitchen. All it needs us some cheeses, and fresh herbs and of course an oven.

Sugar-free Prune, Chocolate and Walnut Cake

It’s been a while since I last posted…blame it on the festive season and the need and demand to eat fried unhealthy stuff! Though I did do my bit to promote diabetic friendly wholesome meals and flavours, in the fight of traditional vs modern, traditional took the cake!

Till I got back to my kitchen and made this glorious moist sticky prune cake.

Sugarfree Blueberry, Apple and Pear Pie

It was time for us to move home, yet again, and I was in a desperate need to clean out all the goodies in my deep fridge–there’s usually enough in there to feed a guest list of about 10 people, arriving unannounced. I had just enough short crust pastry dough to make a pie and about an hour in hand before my guests for dinner arrived. On this particular day, my brain was ticking sweet rather than savoury.

Freakshake with Marshmallows

The Freakshake
The Freakshake

These Freakshakes were invented in a little bakery and cafe called Patissez in Canberra, Australia and since then they shaken up the world of food and the Internet. The Freakshake is a wild combination of flavours and textures. They are supposed to be messy, indulgent, flowing out of the mason jar and filled with delicacies like Nutella, pretzels, salted caramel, brownies and loads and loads of cream.

Shakshuka or Baked Eggs

Shakshuka: eggy bliss
Shakshuka: eggy bliss

Weekends call for some quick and colourful meal options. I mean even for breakfast I hate seeing a boring sunny side up or poached eggs with toast or even an egg sandwich. It does nothing for my desire for the day to start off on a different (read happy, lazy) note. Enter Internet and Google search engine. Words keyed in: Colourful, eggs, wholesome, diet, Images. And out pops this colourful picture of a baked egg or Shakshuka.

Dyed Devilled Eggs Stuffed with Sausage

Dyed devilled eggs stuffed with sausage, cheese and capers

I love drama on a plate which is probably why I love Masterchef with Gordon Ramsay. And when I manage to create a plate that doles of oodles of love and gets the camera snapping, I am beside myself with pride. Cooking at home is so easy, if you just let your imagination run wild. Boiled eggs can never be boring, but they are just ingredients, convert them into a stunner by using this simple process. Boil. Crack. Dip. Boil. Peel! Viola! You have a stunner.
