I was completely out of ideas. I knew I wanted to bake a soft, springy, light cake, but had no idea what!…it was just one of those days when you have a party at home and want to bake to destress..I finally let my colleagues at work decide the dessert. Within no time they were all of Pinterest pulling out the most amazing cakes. This one by Julia won my heart…it had two of my favourite ingredients blueberry and peaches. Sadly I didn’t get any fresh peaches and had to use fresh apricots instead…
It was time for us to move home, yet again, and I was in a desperate need to clean out all the goodies in my deep fridge–there’s usually enough in there to feed a guest list of about 10 people, arriving unannounced. I had just enough short crust pastry dough to make a pie and about an hour in hand before my guests for dinner arrived. On this particular day, my brain was ticking sweet rather than savoury.
Breakfast of Champions! That’s what I would like to call this breakfast in a glass. It’s full of fibre and anti-oxidants and comes packed with nutrition too. You know, introducing smoothies to my morning regimen has really simplified my life and saved close to 30 minutes in my crazy schedule.
What’s more Chia seeds the new healthy edible tonic to consume, its high in Fibre, Calcium, Manganese, Magnesium, Phosphorous, Vitamins, Zinc and Protein! In india, people have used a seed from the same family for many, many years, its called ‘Sabja’ and is a must in falooda. But more about that in a forth-coming post.
