date rollsIf there is one dish that has managed to light up every single guests eye and plaster a smile on it, it is this one…a simple roll, baked to perfection. A crisp exterior, a sweetened centre and a gooey soft pillowy bite! Wait till your guests take a bite, hear the ‘ooohhhhssss’ and ‘ahhhhssss’ and ‘yyyyyuuuuummmms’ and take a bow.:)  You have not just hit the sweet spot, but have become every man’s favourite chef (read person) and every woman’s envy. Enjoy the feeling.

Making this dish is as simple as getting the best ingredients and then just rolling them together. I mean it’s really as simple as that. What you need is bacon that’s not to fatty and thinly sliced .You need fresh feta and the dates you use, need to be non stringy, not to sweet, de-seeded and whole, the broken kinds don’t work here as it kills the delicateness of the dish. I prefer the darker, fatter Omani dates. I actually got lucky this time, it being Ramadaan time, the best dates were being sold. For the bacon i chose my favourite, (but sadly super expensive) cured back bacon available at Natures Basket, if shopping for it in India.

This dish needs a bit of patience, especially when it comes to de-seeding the dates and filling the pocket within the date with the soft salty feta. Don’t add too much of feta–you need to maintain the delicate balance of salty and sweet. Remember both the bacon and feta are salty. The bacon plays two roles, gives the crackling texture, bite and holds the roll together, so don’t compromise on the quality.

The first bite of this delicious bacon-feta-date roll tingles all the taste buds. As you bite into the bacon, you feel the gooey goodness of the feta, then comes the sweetness of the date and that’s when the salty and bacon-y flavours hit! It’s a sensation you aren’t going to forget in a hurry!

  • 1 packet or 12 slices of bacon
  • 6 dates, de-seeded
  • 100 grams of feta


1. Post de-seeding the date stuff the opening with a tablespoon of feta cheese.

2. Place 2 slices of bacon parallel to each other, such that they can wrap around the entire date.

3. Now start rolling the bacon around the date. To do this place the date at one end of the bacon strips and roll to the very end.

4. Use a toothpick–that’s been soaked in water for at least 10 minutes–to hold the roll together.

5. Place the rolls in a pre heated oven and bake for 20 minutes, or till the bacon is crisp, at 180 degree centigrade.

6. Serve immediately.
